<p><u>Cilantro Cream Sauce</u><br />1/4 teaspoon minced garlic<br />1/2 teaspoon salt<br />1 cup sour cream<br />2 tablespoons chopped onion<br />2 tablespoons chopped cilantro<br />1 dash granulated sugar</p>
<p><u>Enchiladas</u><br />6 corn tortillas<br />Oil or lard<br />1 1/2 cup crab meat<br />6 tablespoons minced onion<br />Shredded jack <a href="http://www.recipe.fi/tag/cheese/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Cheese">cheese</a><br />Pitted black olives<br />Avocado slices<br />Sliced peeled tomatoes</p>
<p>Cilantro Cream Sauce: Puree garlic with salt. Combine sour cream, onion, cilantro and sugar. Add garlic <a href="http://www.recipe.fi/tag/mixture/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Mixture">mixture</a> and stir gently to blend well.</p>
<p>Enchiladas: Heat tortillas, 1 at a time, in oil until soft. Place 1/4 cup crab meat in center of each tortilla, then sprinkle with 1 tablespoon onion. Spread a little Salsa Con Tomatillos on top. Roll enchiladas, and place, seam-side down, in shallow baking dish. Cover with remaining Salsa Con Tomatillos. Sprinkle generously with <a href="http://www.recipe.fi/tag/cheese/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Cheese">cheese</a>.</p>
<p>Bake at 400 degrees F about 10 minutes, or until hot and <a href="http://www.recipe.fi/tag/cheese/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Cheese">cheese</a> melts. Serve with dollop of Sour Cream Sauce, and garnish with olives, avocado and tomato slices.</p>

Coat with seasoned flour and shallow fry in hot oil until golden brown and cooked through. Drain on absorbant paper and place in a single layer in a serving dish. Keep hot. Drain most of the oil from the pan, leaving about 1 tablespoon. Return pan to heat and add garlic, rosemary and 3 teaspoons of the seasoned flour. Stir well and cook until flour is golden. Remove pan from heat and pour in vinegar, swirling pan contents to blend. Return to heat and stir in wine or water. Let sauce bubble gently for 1 minute. Pour over sauce and serve immediately. Combine the flour and pepper in a plastic bag and add the meat, (do not pat dry) 1 piece at a time, shaking to coat thoroughly. Heat the oil in the deep fryer or deep large skillet, over medium heat, to 350 degrees. Add the meat in batches (do not crowd) and fry until light brown, about 30 seconds per side. Drain the meat on paper towels and place it on a heated platter that has been tented with foil. For the gravy, pour off all but 2 Tbls of the oil in the skillet, leaving the browned bits. Heat over medium heat and add the flour, stirring and scraping up all of the browned bits for 3 minutes. Remove from the heat and gradually whisk in the milk. <p>Pour into a large bowl. Stir in brown sugar. Add egg yolks, stirring well. Add 2 tablespoons Kahlua and vanilla extract; stir well.</p>
<p>Combine 1 1/2 cups flour, soda, and salt; add to <a href="http://www.recipe.fi/tag/chocolate/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Chocolate">chocolate</a> <a href="http://www.recipe.fi/tag/mixture/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Mixture">mixture</a>. Combine dates next 3 ingredients; sprinkle with remaining 1/2 cup flour, tossing to coat. Stir fruit <a href="http://www.recipe.fi/tag/mixture/" class="st_tag internal_tag" rel="tag" title="Posts tagged with Mixture">mixture</a> into batter.</p>
<p>Beat egg whites at high speed of an electric mixer until stiff peaks form; fold into batter. Spoon batter evenly into prepared pans. Bake at 300 degrees F for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. Let cool in pans on a wire rack 10 minutes; remove from pans, and brush loaves with remaining 1/4 cup Kahlua. Let cool completely on a wire rack.</p>
<p>Wrap fruitcakes in Kahlua-soaked cheesecloth. Store in an airtight container in a cool place at least 1 week before serving. Pour a small amount of Kahlua over each loaf every week up to 1 month. To serve, slice with an electric knife.</p>
